Sourdough Dinner Rolls

Ingredients
Active sourdough starter -
15 g (1 tbsp) - Sourdough starter
50 g (1/3 cup + 1 tbsp) - All purpose flour
50 g (3.5 tbsp) water
Bread Ingredients -
100g (1/2 cup) - active sour dough starter
240 g (1 cup) - Milk
45 g (3 tbsp) - Sugar
375 g (3 cups + 2 tbsp) - Bread flour
28 g ( 2 tbsp) - Butter
10 g (1 tsp) - Salt
Butter for brushing on top of the rolls
Directions
Previous night stir all the active sourdough starter ingredients until combined. Let it rise at room temperature. This should double in size and be frothy.
In a small saucepan, melt the butter, milk, sugar and salt. Let it cool down to the room temperature.
Once at room temperature combine flour and active sourdough starter. Combine until no dry bits left in the bowl. Cover and let it rest for 1 hour at room temperature.
Perform 3 sets of stretch and fold spaced 30 minutes apart. Once complete, cover and let it rest for 2 hours.
Place the dough on flour dusted surface and divide it into 12 pieces (each approx. 65 gms)
Arrange then on a greased baking dish leaving some space in between the rolls. Cover and let it rest for 3 to 4 hours.
Preheat the oven to 375 degrees and bake the rolls for 20 to 25 minutes.
Brush the top with some butter and serve.
