Vegetarian Laska Soup

Ingredients
Grind -
2 tsp - Coriander Seeds
½ tsp - Cumin Seeds
1 tsp - Turmeric Pd
1 inch - Ginger
2 or 3 - Red Chillies (soaked)
1 stalk - Lemongrass - (or) 1 tsp - Lemon Zest + 2 tbsp Coriander stalk
3 nos - Garlic
10 to 12 nos - Almonds or cashews
Handful - Cilantro
3 tsp - Lime / Lemon Juice
Other Ingredients -
2 tbsp - Coconut oil
1 can - Coconut Milk (400 ml)
3 cups - Veggie broth
2 cups - Mixed Veggies (carrots, broccoli, cauliflower, zucchini, potatoes)
2 cups - Tofu
1 pack - Noodles (MAMA brown rice noodle)
1 tsp - Soy Sauce
1 tsp - Brown sugar
Directions
Grind to paste - dry roast cumin and coriander seeds. Cool and grind all the other ingredients to smooth paste with 3 tbsp of water.
Heat a pan and add coconut oil. Then add the ground paste for 3 to 4 mins.
Add coconut milk, veggies and broth. Simmer on low flame for 15 mins.
Add noodles and cook for another 3 mins or as per package instructions.
Add soy sauce, and sugar. Check for salt and lemon juice.
Garnish with coriander leaves and basil leaves.
