Vendakkai Mochai Mandi

Ingredients

  • Mochai - 1/2 cup (soaked overnight and cooked with little salt)

  • Vendakkai (okra) - 20 to 25 nos (Cut into big cubes)

  • Fenugreek - 1/2 tsp

  • Mustard seeds - 1/2 tsp

  • Dried chillies - 1 no

  • Green Chillies - 1 no

  • Garlic - 8 to 10 nos

  • Cumin seeds - 1/2 tsp

  • Onion - 1 no

  • Tomato - 1 no (pureed)

  • Tamarind extract - 1/4 cup (from 1 small lime sized tamarind)

Direction

  1. Mix cubed okra with some oil and bake in the airfryer for 7 mins at 375 degrees (roast mode).

  2. Heat oil, add fenugreek and mustards. Let it splutter.

  3. Then add dried chillies and cumin seeds. Let it splutter.

  4. Add green chillies and chopped garlic. Saute till the raw smell goes.

  5. Add chopped onions and saute till they are transparent.

  6. Add pureed tomatoes and let it boil for 5 to 6 mins.

  7. Add mochai and salt. Boil for 2 mins.

  8. Add tamarind extract and boil for 6 to 7 mins till raw smell goes.

  9. Add baked vendakkai/okra on low flame for 5 to 6 mins.
