Cauliflower chickpeas tacos

Ingredients

  • 6 - Tortillas

  • 1/2 cup - Shredded Cabbage

  • 1/2 cup - Shredded Cheese

Cauliflower & Chickpeas

  • 3 cups - Cauliflower florets

  • 1 cup - Chickpeas

  • 1-2 tbsp Olive oil

  • ½ of Lemon Juice

  • 1 tsp Garlic Powder

  • 1 tsp Cumin Powder

  • 2 tsp Chili Powder

  • Salt

Pineapple Salsa

  • 1 cup - Diced pineapple

  • 1 - Jalapeno Chopped

  • ½ of Lemon Juice

  • 1-2 tbsp - Chopped Cilantro

  • ½ cup - Cubed Tomato

  • ½ cup - Cubed bell pepper

  • ½ cup - Sliced Onion

  • Salt

Mint Yogurt Sauce

  • 1/2 cup - Fresh Mint Leaves

  • 1 Cup - Greek Yogurt

  • 2 - Garlic cloves

  • Jalapeno - 1

  • Salt

Directions

1. Preheat the oven to 400F. In a mixing bowl, add all the cauliflower and chickpeas ingredients, toss and coat well. 2. Spread it on a baking sheet and roast it for 20-30 mins. 3. For salsa, add ingredients in a bowl, mix it and set aside. 4. For Mint Sauce, grind all the ingredients to smooth sauce. 5. Heat the griddle and cook the tortillas on both sides until light brown spots. Place it on a serving plate. Spread the roasted cauliflower and chickpeas over it, then top over with some salsa, cabbage, drizzle mint sauce, shredded cheese and serve it.
