Ingredients

Cilantro Rice

  • 1 cup - Cooked Rice

  • 2 tbsp - Cilantro Leaves

  • 1/2 tbsp - Lemon Juice

  • 1 tbsp - Butter

  • Salt & Pepper to taste

Black Beans

  • 1 cup - Cooked black beans

  • 1 tsp - Taco Seasoning

  • 1/2 tsp - Lemon Juice

  • 1 tbsp - Cilantro Leaves

  • Salt to taste

Veggies

  • 1 cup - Sliced onions

  • 1 cup - Tri color bell pepper

  • 1 tsp - Taco Seasoning

  • 1 tsp - Lemon Juice

  • 2 tsp - Cilantro Leaves

  • Salt to taste

Corn

  • 1 cup - Cooked corn

  • 1/2 cup - Deseeded and chopped tomatoes

  • 1/2 cup - Diced onions

  • 1 tbsp - Cilantro Leaves

  • 1/2 tsp - Green Chillies

  • 2 tsp - Lemon Juice

  • Salt to taste

Avocado

  • 1 - Avocado (Deseeded and sliced)

  • 1 tsp - Lemon Juice

Lettuce Cheese Salsa


Directions

  1. Cilantro Rice - Melt butter and mix everything well.

  2. Black Beans - Mix everything well.

  3. Veggies - Heat oil, add sliced onions and bell peppers. Once 3/4th cook add rest of the ingredients and mix well. Cook until done.

  4. Corn - Mix everything well

  5. Avocado - Add lemon juice to avocado slice to avoid browning

  6. Plating - Place the rice in the middle and other dishes around it. Serve it with some hot sauce.
