PINEAPPLE FRIED RICE

Ingredients
Jasmine Rice - 2 cups (cooked)
Garlic - 2 nos (minced)
Shallot - 1 (chopped)
Carrot - 1 med (cubed)
Peas - 1/2 cup
Tofu - 16 oz (Drained and cubed)
Curry powder - 2 tsp
Soy sauce - 1.5 tbsp
Vegetarian Mushroom Sauce - 1 tbsp
Pineapple - 1 cup (cubed) with 1/4 cup of juice
Sugar - 1 tsp
Pepper Powder - 1tsp
Directions
Cook jasmine rice previous day and store it in the fridge. This will ensure the grains are well separated. (To cook jasmine rice - add 1 cup rice to 1 1/4 cup of water + 1 tbsp Coconut oil and salt for 5 mins on high in Instant Pot).
Heat oil on high flame. Add tofu and saute till they are crispy.
Add garlic and shallots. Saute will they are transparent.
Add carrots and peas. Cook until 3/4th cooked.
Add salt, sugar, curry powder, and pepper powder. Mix well.
Add the chilled rice, soy sauce, and vegetarian mushroom sauce. Mix well.
Add chopped pineapple and the juice. Mix and let the rice sit for 30 secs and then toss.
Garnish with spring onions.
