Schezwan noodles

Ingredients

  • 1/2 cup - Bell peppers

  • 1/2 cup - Carrots

  • 1/2 cup - Cabbage

  • 1/2 cup - Beans

  • 1 no - Onion (small sliced)

  • 1 tsp - Soy sauce

  • 1/4 cup - Spring onions

  • 1 tsp - Garlic (minced)

  • 1 tbsp - Schezwan sauce

  • 250 gms - Cooked noodles (* I used Ying Yang brand from Indian stores)

Grinding Ingredients

  • 15 nos - Kashmiri Chilli

  • 1 tbsp - Vinegar

  • 1/8 cup - Oil

  • Hot water

Preparation

  1. Boil water along with vinegar and cook red chillies for 5 to 8 mins. Let it cool. Drain water and grind to smooth paste.

  2. Heat oil add ground paste. Cook on med flame for 6 to 8 mins. Cool.

  3. Heat oil on high flame. Add garlic, onions, and white part of spring onion.

  4. Add the veggies and saute till they are 3/4 cooked.

  5. Add salt, soy sauce, and schezwan paste and mix well.

  6. Add cooked noodles. Toss well. Garnish with spring onions and serve hot.
