Thai Basil Fried Rice

Ingredients

  • 1 cup - Cooked rice

  • 1/2 block - Tofu (pressed and water removed)

  • 1/4 cup - Bell Peppers

  • 1 - Carrot (med)

  • 4 to 5 - Beans

  • 3 cloves - Garlic (minced)

  • 3 stalk - Spring Onions (Whites and greens separated)

  • 1/2 cup - Basil (chopped)

  • Soy Sauce - 3 tbsp + 2 tbsp

  • Veg Oyster sauce - 1 tbsp

  • Brown Sugar - 1 tsp

  • Rice Vinegar - 1 tsp

  • Garlic Powder - 1/2 tsp

  • Lemon Juice - 2 tbsp

  • Sesame oil - 2 tbsp

  • Salt and Pepper

Directions

  • Cook rice, cool it. Mix 1 tbsp soy sauce and 1 tbsp sesame oil to rice.

  • Mix soy sauce (3 tbsp), veg oyster sauce, brown sugar, rice vinegar, garlic powder and lemon juice.

  • Press and drain tofu, cube them. Marinate the cubed tofu in the mixed sauce.

  • Heat oil in a wok. Add cubed tofu and saute till they get crisp. Keep aside.

  • Add garlic and white part of onions.

  • Add veggies and tofu, saute for 3 to 4 mins. Add the marinated sauce along with veggies.

  • Add rice, salt, pepper and sesame oil (1 tbsp). Mix well.

  • Add chopped basil and mix well. Cook for 1 to 2 mins.

  • Garnish with green parts of the spring onions.
