KALKANDU SAADHAM (கற்கண்டு சாதம்)

Ingredients:

  • Raw Rice - 1 cup

  • Milk - 2 cups

  • Water - 1 cup

  • Kalkandu or Rock Candy - ¾ cup

  • Ghee - 1 tbsp

  • Raisins - ½ tbsp

  • Cashews - 4 to 5 (broken in to small pieces)

  • Powdered Cardamom - ¼ tsp

Directions:

  1. Wash rice well in water. Cook rice, milk and water for 2 to 3 whistles in a pressure cooker on medium flame

  2. Once the pressure is released, add rock candy, mix until the rock candy is dissolved. (Make sure to do this as soon as the pressure is released as the rice needs to be hot for the candy to dissolve)

  3. Heat Ghee, add raisins and cashews. Fry till golden brown and add this along with powdered cardamom to the rice

  4. Serve Hot
