Peanut Sauce Noodles

Ingredients

Sauce:

  • Peanut Butter creamy - ¼ cup

  • Soy Sauce - 1/8 cup

  • Rice Vinegar - 1/8 cup

  • Sesame Oil - ½ tbsp

  • Water - 1/8 Cup

  • Ginger - ½ tbsp (minced)

  • Garlic - 2 (minced)

  • Brown Sugar - 1 tbsp

  • Siracha sauce or red chilli paste - 2 tbsp

Other Ingredients:

  • Whole grain Spaghetti - 1 box

  • Onions - 1 (sliced)

  • Bell Peppers - ½ cup

  • Carrots - 1

  • Cabbage - ½ cup

  • Tofu Cubes - ½ cup (fried)

  • Spring Onions - Few

Directions

  1. Boil spaghetti as per instruction on box. Drain and run it through cold water to stop the cooking process

  2. Mix everything in the sauce ingredients together into a sauce

  3. Heat oil and add onions. Saute till they are transparent

  4. Add the bell peppers, carrots and cabbage. Cook till they are half cooked

  5. Add tofu and the sauce and cook for 2 to 3 mins

  6. Add the spaghetti noodles and mix well

  7. Garnish with spring onions and serve hot
