Fried Pulao

Ingredients:

  • Rice - 2 cups

  • Saffron - a pinch

  • Salt - to taste

  • Water - 3 cups

  • Cloves - 3

  • Cardamom - 2

  • Cinnamon - 1/2"

  • Aniseed - 1

  • Cumin Powder - 2 tsp

  • Pulao Masala - 1 tsp

  • Pepper Powder - 2 tsp

  • Mint leaves - Few sprigs

  • Coriander Leaves - few sprigs

  • Lemon Juice - 4 tbsp

  • Carrot - 1 cup (grated)

  • Peas - 3/4 cup

  • Onion - 2 nos (med)

Direction:

  1. Soak rice for 2 hours. Cook rice, a pinch of saffron and salt in 3 cups of water.

  2. Heat oil; add the spices.

  3. Add the thinly sliced onions and fry till they are golden brown.

  4. Add mint and coriander leaves.

  5. Add cumin powder, pepper powder and pulao powder. Saute for 2 to 3 mins.

  6. Add grated carrot and thawed frozen peas. Saute for 2 mins.

  7. Take it off the flame. Mix the cooked rice and lemon juice.
