Fried Pulao

Ingredients:
Rice - 2 cups
Saffron - a pinch
Salt - to taste
Water - 3 cups
Cloves - 3
Cardamom - 2
Cinnamon - 1/2"
Aniseed - 1
Cumin Powder - 2 tsp
Pulao Masala - 1 tsp
Pepper Powder - 2 tsp
Mint leaves - Few sprigs
Coriander Leaves - few sprigs
Lemon Juice - 4 tbsp
Carrot - 1 cup (grated)
Peas - 3/4 cup
Onion - 2 nos (med)
Direction:
Soak rice for 2 hours. Cook rice, a pinch of saffron and salt in 3 cups of water.
Heat oil; add the spices.
Add the thinly sliced onions and fry till they are golden brown.
Add mint and coriander leaves.
Add cumin powder, pepper powder and pulao powder. Saute for 2 to 3 mins.
Add grated carrot and thawed frozen peas. Saute for 2 mins.
Take it off the flame. Mix the cooked rice and lemon juice.
