Hyderabadi Veg Dum Biryani

Ingredients

  • 200gms -Beans

  • 5 nos - Carrots

  • 9 nos - Potatoes

  • 1 cup - Peas

  • 3 nos - Green chilies

  • 1 - Red Onion (med)

  • Handful - Coriander

  • Handful - Mint

  • 1 cup + 2 tbsp - Yogurt

  • 2 tbsp - Ginger Garlic Paste

  • 1 tsp - Garam masala

  • 2 tsp - Chili powder (1 tsp Kashmiri red chilli powder + 1 tsp chilli powder)

  • 1/2 tsp - Turmeric powder

  • 1 tsp - Shahi jeera

  • 4 - Cardamom (2 + 2)

  • 2 - Star Anise (1 + 1)

  • 1 - Mace

  • 4 - Cloves (2 + 2)

  • 2 - Bay leaves (1 + 1)

  • 2 - Black cardamom - (1 + 1)

  • 2 large pieces - Cinnamon (1 + 1)

  • 3 cups - Rice

  • Juice of half a lemon

Preparation

  • Gravy Preparation -

    • Fry each vegetable except peas separately in oil with little salt. Keep Aside

    • Heat oil / ghee and add other half of whole spices

    • Add ginger garlic paste to the oil and saute

    • Add green chilies and saute for another min

    • Add the turmeric and chilli powders and mix well. Saute for few seconds

    • Reduce the flame and add beaten yogurt. Mix well

    • Add chopped coriander and mint leaves along with salt

    • Once everything is mixed in add fried veggies and peas. Mix well

    • Add extra dollop of yogurt along with garam masala

    • Cover and cook for 5 mins until everything is well combined

    • Add fried onions to the gravy along with juice of half lemon

    • Cover and keep aside until rice cooks

  • Rice Preparation

    • Rinse and soak rice

    • Boil water and add the cardamom, star anise, cloves, bay leaves, black cardamom, cinnamon and shahi jeera along with salt and 1 tbsp oil

    • Once water comes to rolling boil add the soaked and drained rice and cook for 7 mins

  • Layering

    • Line a hard bottom vessel with sliced potatoes

    • Layer some veggies and then with some rice and cooking water (very very less)

    • Add ghee, some fried onion and some mint and coriander leaves

    • Add another layer of veggies, rice and top it with some ghee, color, fried onion and some mint and coriander leaves

  • Cover the dish with foil and dum for 15 mins
