Nylon Dhokla

Ingredients
Sugar - 3 tbsp
Salt - 1/2 tbsp
Citric Acid - 1 tsp
Oil - 1.5 tbsp
Water - 1 cup
Besan - 2 cups
Baking Soda - 1 tsp (plus 1 tbsp)
Tempering:
Oil - 2 tbsp
Mustard seeds - 1 tbsp
Green chillies - 3 nos
Sesame seeds - 1 tbsp
Water - 1/2 cup
Sugar - 2 tbsp
Fresh coriander leaves
Asafoetida - 1/2 tsp
Directions
In a large bowl mix water, citric acid, sugar, salt, and oil. Whisk until sugar and citric acid is dissolved.
Sieve the gram flour and whisk well until there are no lumps and batter is smooth.
Rest the batter for 10 mins.
While batter is resting, Set the steamer up.
Finally add baking soda and 1 tbsp water. Mix well.
Pour this into a greased container and steam for 2o to 25 mins.
Remove and cool for 10 to 15 mins before unmoulding.
Heat oil, add mustard and sesame seeds. Once it splutters add green chillies.
Add rest of the remaining ingredients. Cool it down to warm temperature.
Pour this over the dhokla. Cut and serve with green chutney.
