Pav Bhaji

Ingredients

  • Butter - 3 tbsp

  • Boiled Potatoes - 3 (med - boiled, peeled and mashed)

  • Carrot - 1

  • Cauliflower - 1 cup

  • Beans - 7 to 8 nos

  • Beetroot - 4 tbsp (grated)

  • Tomato - 1 (med - pureed)

  • Ginger garlic paste - 1.5 tsp

  • Onion - 1/2 (med - chopped)

  • Bell pepper - 1/3 cup

  • Kasuri methi - 1 tbsp + 1/2 tbsp

  • Pav Bhaji masala - 3 tbsp + 1.5 tsp

  • Chilli powder - 2 tsp + 1/2 tsp

  • Turmeric powder - 1/2 tsp

  • Lemon juice - 2 tbsp

  • Coriander leaves - 5 tbsp

Direction

  1. Pressure cook boiled potatoes, carrot, cauliflower, beans, tomato, pureed tomato along with kasuri methi, pav bhaji masala, chilli powder, turmeric powder, salt, some coriander leaves and 1/4 cup water. Once the pressure is released, open and mash the veggies well.

  2. Heat butter. Add rest of the kasuri methi, pav bhaji masala, chilli powder. Saute for 15 to 20 secs on low flame.

  3. Add onion, bell pepper, ginger garlic paste and lemon juice to the powders and saute till onion is cooked.

  4. Add this to the mashed veggies and bring it to boil. Add some boiling water if needed to adjust the consistency.

PAV BHAJI POWDER -
  • Coriander seeds - 4 tbsp

  • Cumin seeds - 2 tbsp

  • Bay leaf - 2

  • Cloves - 6

  • Cardamom - 2

  • Black cardamom - 1

  • Cinnamon stick - 2 inch

  • Pepper - 1 tbsp

  • Fennel seeds - ¾ tbsp

  • Kashmiri red chili - 10 nos

  • Turmeric powder - 1 tsp

  • Dry mango powder -1 tbsp

  • Black salt - 1 tsp

  • Kasuri Methi - 2 tsp

  • Nutmeg - 1

* Dry roast each ingredients individually and grind to fine powder.
