Tiffin sambar

Ingredients
1/2 cup - Thuvar dal
1/2 cup - Moong dal
12 to 13 nos - Pearl onion
1 cup - Mixed veggies (carrot, potatoes, beans, drumsticks)
1/2 tsp - Turmeric powder
1 tbsp - Ghee
2 tbsp - Tamarind concentrate
2 nos - Tomatoes (med)
2 tsp - Jaggery
1 nos - Onion (Med)
1 tsp - Mustard
2 tbsp - Sambar Powder
1/2 tsp - Hing
Sambar Powder
10 gms - Kashmiri chillies
10 gms - Red chillies
20 gms - Coriander seeds
10 gms - Jeera
10 gms - Peppercorns
10 gms - Fenugreek
Preparation
Grind all the sambar powder ingredients to a fine powder.
Cook dals, pearl onion, mixed veggies, turmeric powder, and salt in pressure cooker for 3 to 4 whistles. (IP/PIP/LP - 17 mins)
Heat ghee, add cut tomatoes (saute for 2 to 3 mins), tamarind concentrate, jaggery with 1/2 cup water. Cover and cook for 10 mins on low flame.
Add dal mix to this along with needed water and cook for another 5 to 6 minutes.
Heat oil separately, add mustard and Hing. Add chopped onions and saute well. Turn off the heat. Add sambar powder and cook for 1 minute.
Add this to the dal mixture and let it boil for 5 mins. Switch off.
Garnish with coriander leaves. Cover and let it sit for 10 mins.
